~14 cups
1 (12-ounce) package gluten-free bowtie pasta (aka, farfalle)
1 large head organic broccoli
1 cup halved organic grape or cherry tomatoes
10-12 Natural Grocers® Brand Organic Whole Greek Pepperoncini, thinly sliced (discard stems and seeds)
1 (2.5-ounce) can Natural Grocers Brand Sliced Ripe Black Olives, drained
1⁄2 cup roughly chopped organic parsley, basil, or a combination
1⁄2 cup chopped Natural Grocers Brand Organic Roasted Red Peppers
1 Natural Grocers Brand Organic Mozzarella Cheese Block, cut into small cubes
3-4 ounces salt-cured salami, pepperoni, sopressata, or capocollo, (or a combination), cut into quarters
Italian Dressing
6 tablespoons Natural Grocers Brand Organic Extra Virgin Olive Oil
3 tablespoons organic red wine vinegar
2 teaspoons Natural Grocers Brand Organic Dijon Mustard
1 tablespoon Natural Grocers Brand Bulk Organic Italian Seasoning Blend
1 teaspoon Natural Grocers Brand Bulk Organic Garlic Granules
1 teaspoon Natural Grocers Brand Bulk Real Salt
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Ground Black Pepper
  1. Bring approximately 3 quarts of salted water to a boil in a large pot.
  2. Cut the broccoli into bite-sized florets. Peel and discard the thick skin from the stem and cut off the tough end. Slice the peeled stem into 1/3-inch pieces. Once the water is boiling, add the pasta and cook according to package directions. About 2 minutes before the pasta should be done, test to see if it is al dente. If it is not quite al dente, cook another minute or two. Once al dente, add the broccoli and continue to cook for 2 minutes, or until the pasta is tender.
  3. While the pasta cooks, whisk the dressing ingredients in a large serving bowl.
  4. Once the pasta is cooked, drain it and the broccoli and immediately rinse in cold water for a minute or two, stirring occasionally until it is cool. Drain thoroughly.
  5. Combine the pasta, broccoli, and all remaining ingredients in the bowl with the dressing and gently stir to combine well. Cover and refrigerate for at least an hour before serving. Stir gently once after about 30 minutes in the refrigerator. Gently stir again just before serving to redistribute the dressing.
